Low FODMAP Seed Loaf

You won’t be disappointed with this delicious, low FODMAP Seed Loaf. With added turmeric and carrots it glows with colour. Turmeric is known to be beneficial due to it containing curcuminoids which have anti-inflammatory and antioxidant properties. Each slice is high in fibre and protein, so great for vegetarians and vegans too.

Makes about 18 slices

Ingredients

120g milled flaxseeds
200g carrots, grated
150g oats
2 tbsn olive oil
40g chia seeds
75g pumpkin seeds
75g sunflower seeds
50g sesame seeds
50g ground almonds or desiccated coconut
30g crushed walnuts
2 tpsn ground turmeric powder
Freshly ground black pepper
1 tspn sea salt
350-400ml water

Method

In a large bowl, mix all the dry ingredients together, finally adding in the carrots and stir well. Then add the oil and water slowly and mix well with. The dough should be quite thick. If it is too dry add a touch more water to reach the desired consistency. Transfer to a 2lb loaf tin and flatten the surface with the back of a wet spoon. (Best to line the tin previously to avoid sticking).

Sprinkle with extra sunflower seeds. If you have the time, leave the mixture to stand 30-60 minutes to allow
the chia seeds to bind the dough together. Preheat the oven to 185°C fan. Bake the loaf in the oven for around 1 hour. Test with a knife and it should come clean when it’s cooked.

Allow to cool completely before slicing. Then enjoy….
