These low FODMAP Banana Muffins are a great way to use up those ripe bananas. In the small amounts that you’ll enjoy in a single muffin, the ripe banana will be fine for your gut. The addition of carrots and chia seeds will ensure that the muffin is nice and moist. They freeze well, so can be available as a treat when you need it.
Makes 18 delicious muffins
Ingredients
- 290g gluten free all-purpose flour
- 140g ground polenta
- 2 tspn baking powder
- 1 tspn salt
- 165ml vegetable or olive oil
- 180g sugar
- 4 large eggs, at room temperature
- 3 medium-sized ripe bananas
- 2 medium carrots, grated
- 3 tbsn chia seeds
- 2 tspn vanilla extract
Method
Begin by whisking together the bananas, carrots, chia seeds and vanilla and set aside for 30 minutes to allow the chia seeds to gel. Then preheat your oven to 350° F/180°C. Coat the insides and the tops of 18 standard sized muffin tins with nonstick spray or easier still, use muffin cases.
Mix the dry ingredients in a large bowl. Add the oil and eggs (one at a time) until thoroughly combined. Add the wet banana mixture and make sure it combines well. Divide the mixture equally between the prepared cases and bake for around 20 minutes (best check after 15 minutes). They should be a nice golden colour and when pressing the top it should bounce back when cooked.
Allow to cool (if you can – the smell is so delicous, but try to resist!). These low FODMAP Banana Muffins are delicious when warm and are gentle on your gut. They keep well in an airtight container for 3 days, but freeze well too.
Tips
- Try adding a few suitable nuts and seeds to add variety
- Works well with some low FODMAP fruit, such as chopped raspberries or strawberries or even raisins
