Low FODMAP Carrot and Oat Bake

This delicious low FODMAP Carrot and Oat Bake is perfect for breakfast or a healthy snack. Naturally sweetened with a touch of maple syrup and packed with wholesome oats and carrots, it’s moist, lightly spiced with cinnamon, and wonderfully satisfying. Each serving provides good fibre and is gentle on sensitive tummies.

Makes 9 squares

Ingredients

  • 60g rolled oats
  • 50g grated carrot
  • 200g lactose free Greek yoghurt
  • 2 eggs
  • ½ tspn baking powder
  • 1 tspn cinnamon
  • 1 tbsn maple syrup
  • Almond flakes or crished walnuts for topping

Method

  1. Preheat oven to 400°F (200°C)
  2. Mix oats, cinnamon, and baking powder
  3. Whisk in lactose free Greek yoghurt, eggs, and maple syrup
  4. Add grated carrot and mix well
  5. Pour into a baking dish and top with almond flakes or walnuts
  6. Bake for 25-30 minutes or until golden brown

Allow to cool completely before slicing. Then enjoy…
