This delicious low FODMAP Carrot Hummus is great if you love hummus but are following a low FODMAP diet. It adds colour and flavour to accompany low FODMAP vegetables and saladings. It’s simple to prepare and just shows that the low FODMAP diet doesn’t need to be boring.
Serves: 4
Ingredients:
- 300g carrots, peeled and roughly chopped ready to blend
- 2 tbsn tahini
- 2 tbsn virgin olive oil
- 1 tspn cumin
- ½ tspn garlic replacement (optional)
- Lemon juice to taste
- Salt and freshly ground black pepper
Method:
- Blitz the carrots in a food processor until finely chopped
- Add the remaining ingredients with a good squeeze of lemon juice and a little salt and pepper and blitz again until your mixture resembles a paste
- Taste the hummus and add more seasoning as needed
Serve straight away or store in an airtight container in the fridge for up to 2 days
TIPS
- During blitzing, ensure you scrape the sides regularly to incorporate all the mixture
- Try adding different herbs and spices e.g. coriander of fennel seeds
- Serve with sliced raw vegetables or use with jacket potato
- Swap the carrots for other vegetables e.g. beetroot (but limit to just a small amount)
