These low FODMAP Carrot and Oat Cookies are simply delicious! These are an inspired mash-up of these two beloved classics. Super simple to make, too. The carrots add colour and moisture to a traditional oat cookie recipe. You can add a few raisins or suitable nuts, such as walnuts. These freeze well, but best enjoyed just cooled.
Makes: ~24 Cookies
Ingredients:
- 150g wheat free flour
- 100g rolled oats
- 110g carrots, grated
- 1 tspn baking soda
- ½ tspn salt
- 60ml vegetable oil
- 125g soft, brown sugar
- 1 ½ tspn vanilla extract
- 1 ½ tspn cinnamon
- 1 large egg
- 80g raisins
- 30g chopped walnuts
Method:
- Preheat the oven to 180°C (350°F). Line two baking sheets with parchment paper and set aside.
- In a small bowl, mix together the wheat free flour, oats, baking soda, and salt and set these aside.
- In a large mixing bowl, whisk together the oil, sugar, vanilla, and cinnamon, then whisk in an egg. Add the shredded carrots, raisins and nuts, mixing until combined.
- Slowly add the dry mixture to the wet until the cookie dough comes together. It will be thick.
- Drop the cookie dough in golf-ball sized rounds, 5 cm apart, onto prepared sheets. Bake for about 10 to 12 minutes, rotating pans from one rack to the other, and front to back, halfway through baking time. Cool cookies on a wire rack.
TIPS
- Cookies should just be beginning to take on a golden hue, with the edges firmer than the centers; the centers can remain a tad soft
- Try swapping the raisins for dried cranberries and using other low FODMAP nuts
- Great for a mid-morning treat or for the lunch box
- These freeze well, so save some for another time
