Low FODMAP Strawberry Chia Pots

These refreshing low FODMAP Strawberry Chia Pots are a lovely light dessert or breakfast on a hot day. Naturally sweet, dairy-free and low FODMAP, they offer a soothing texture and vibrant taste. You can use any low FODMAP fruit such as rasperries or blueberries for more variety. This is so quick and easy and can even be done ahead of time.

Serves 2

Ingredients

  • 250ml lactose-free milk or unsweetened almond milk
  • 3 tbsp chia seeds
  • ½ tsp vanilla extract
  • 1 tsp maple syrup or Golden Syrup
  • 6 medium strawberries
  • 2 tbsp coconut yoghurt
  • A few mint leaves, to garnish

Method

In a bowl or jar, combine the milk, chia seeds, vanilla extract and maple syrup. Stir well and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes to prevent clumping.

When ready to serve, blend half the strawberries and gently swirl through the chia mixture. Spoon into glasses or pots, top with coconut yoghurt, sliced strawberries, and mint.

Perfect as a make-ahead treat, breakfast or cooling summer snack.

Tips

  • Try alternative toppings for your low FODMAP Strawberry Chia Pots: raspberries, blueberries, a tablespoon of mixed seeds or a few pecan or walnuts
  • Use coconut yoghurt and almond milk to make them vegan
  • To add extra fibre, try adding ground flaxseeds as a topping
