Low FODMAP Lamb and Feta Meatballs

These low FODMAP lamb and feta meatballs are delicious. Great as a main meal or snack and packed with flavour. These can be served in wheat free pitta or with rice and other suitable low FODMAP vegetables or salad. These can be cooked in advance and chilled or frozen. They will be gentle on digestion while still being satisfying and delicious.

Serves 6

Prep and cook time – 30 minutes

Ingredients

  • 500g lean, minced lamb
  • 100g feta cheese, crumbled into 1cm pieces
  • 1-2 slices of wheat-free bread (blitzed in a processor to breadcrumbs)
  • 2 spring onions (green tops only), finely chopped
  • 2 tbsns garlic-infused olive oil
  • ½ tspn ground cinnamon
  • ½ tspn sumac
  • ½ tspn garlic replacement (optional)
  • 10g fresh parsley
  • Salt and pepper, to taste
  • Fresh coriander and sliced red chillies, for garnish
  • Lime wedges, to serve

Method

Firstly, preheat the oven to 200°C (380°F). Put the mince, feta, breadcrumbs, spring onion tops, herbs and spices and seasoning in a large mixing bowl. Mix well and form them into 4cm diameter balls. This should make around 18 meatballs.

Heat the olive oil in a large frying pan over medium heat. Once hot, add the meatballs and fry for around 5-6 minutes, turning them occasionally to brown them on all sides. Transfer them onto a lined roasting tray and bake in the oven for a further 5 minutes until the meatballs are cooked through.

Add some fresh coriander and red chillies for garnish and squeeze a little lime juice over the meatballs for that extra zing. Serve with pitta, salad or rice. Enjoy….

Tips

  • For an extra boost of freshness add a handful of other chopped fresh herbs
  • Pair this with a side of rice or a simple green salad for a complete meal
