These low FODMAP Lemon Polenta Cupcakes are a sunny, melt-in-the-mouth treat that combines fine polenta with yoghurt and olive oil for an irresistibly tender crumb. A spoonful of lemon curd poured over warm cupcakes is the secret to keeping them beautifully moist. Simple to make, and they keep well, but will they last that long?
Makes: 12 cupcakes
Ingredients
- 100g fine polenta
- 150g all-purpose wheat free flour (or substitute with ground almonds or oats)
- 120g caster sugar
- 8g baking powder
- Pinch of salt
- 2 eggs
- 120g plain yoghurt or sour cream
- Zest and juice of 1–2 lemons (2–3 tablespoons of juice)
- 50g olive oil
For the lemon syrup
- Lemon curd
Method
- Preheat the oven to 180°C. Line a 12-hole muffin tin with paper cases and set aside.
- In a large bowl, whisk together the dry ingredients: polenta, flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the wet ingredients: eggs, yoghurt, olive oil, lemon juice, and lemon zest.
- Fold the wet mixture into the dry ingredients until just combined. Do not overmix, as overmixing will make the cupcakes dense.
- Spoon the batter evenly into the prepared cases and bake for around 25 minutes, until a skewer inserted into the centre comes out clean and the tops are lightly golden.
- When the cupcakes are cool, make a small hole in the top of each cake. Spoon the lemon curd into the hole.
Tips
- Use fine polenta, as coarse polenta will give a grittier texture rather than a tender crumb
- Ground almonds or ground porridge oats can replace the flour entirely for a naturally gluten-free version
- These keep well in an airtight tin for 2–3 days, or freeze beautifully
- Try adding a little orange zest alongside the lemon for a slightly warmer citrus flavour
