Low FODMAP Chicken Pasta Salad

This easy Low FODMAP Chicken Pasta Salad is packed with protein and Mediterranean flavour. Using gluten-free pasta and simple low FODMAP ingredients, it’s a great make-ahead lunch or picnic option. So quick and easy to make and will be good for your gut. If you fancy a change, try fish or tender beef strips or to make it veggie maybe tofu.

Serves 2

Ingredients

  • 150g cooked gluten-free pasta (cooled)
  • 1 cooked chicken breast, shredded
  • 1 tbsp garlic-infused olive oil
  • 8 black olives, pitted and halved
  • 1 tbsp capers (rinsed)
  • 1 small handful cherry tomatoes
  • 1 tbsp fresh basil, torn
  • Juice of ½ lemon
  • Salt and pepper

Method

It’s all in the prep! Once you have your ingredients lined up, place them in a large bowl. Combine the pasta, chicken, olives, capers and cherry tomatoes.

Drizzle with garlic-infused oil and lemon juice, then add the basil, salt and pepper. Toss everything together gently until coated and glistening. Garnish with a few leaves of Basil and serve with wheat-free bread or 100% Spelt sourdough bread.

Chill before serving. Ideal for warm days when you need something easy, light and nourishing.

Tips

  • Serve with airfried potatoes or rice for a change
  • You could add tofu instead of meat to make a veggie treat
  • Try different low FODMAP vegetables such as courgette, a little celery or grated carrot for a change
  • Try adding different herbs and spices for a change – maybe coriander or parsley
  • Try adding a little feta or red peppers for extra flavour and colour
