Looking for a fresh, flavour-packed BBQ favourite that won’t upset your tummy? These low FODMAP lemon and chicken skewers are perfect for sunny days and outdoor gatherings. Marinated in a zesty blend of lemon, garlic-infused oil and herbs, they’re deliciously tender and easy to digest.
Serves 2
Ingredients
- 2 skinless chicken breasts, cut into bite-sized chunks
- 2 tbsp garlic-infused olive oil (FODMAP-friendly)
- Zest and juice of 1 lemon
- 1 tsp dried oregano
- 1 tbsp fresh parsley, chopped
- Salt and pepper, to taste
Method
In a bowl, mix the garlic-infused oil, lemon zest and juice, oregano, parsley, salt and pepper. Add the chicken pieces and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes.
Thread the marinated chicken onto skewers. Grill on a medium-high BBQ or griddle pan for around 10–12 minutes, turning occasionally until the chicken is cooked through and golden.
Serve with a crisp green salad and a side of boiled new potatoes for a complete low FODMAP summer meal.
Tips for the perfect low FODMAP Chicken Skewers
- Swap the protein – Not a fan of chicken? Try using firm tofu, prawns or diceced beef for a tasty alternative
- Make it extra fresh – Add a squeeze of fresh lime and a sprinkle of chopped coriander before serving
- Crunchy alternative – Use the cooked chicken and add to tortillas or a salad
- Add a sauce – try terriyaki sauce for a tasty alternative
- Pair with a side – Serve with a portion of low FODMAP Wild Rice Salad for a complete meal
- Batch cook for convenience – Cook a double portion and store leftovers in the fridge for up to 2 days. Simply reheat and serve!
