Smoked salmon with scrambled eggs are a beloved breakfast treat or great as a snack at any time of the day. With a few simple substitutions, they can easily be made to be FODMAP-friendly. Whether you’re serving them up with croissants or wheat free muffins, this recipe ensures that you can enjoy this classic dish without discomfort. This low FODMAP smoked salmon with scrambled eggs is easy to prepare and won’t upset your gut.
Serves 2 Minimal prep time
Ingredients
- 4 eggs
- 60g lactose-free cream cheese
- 80g smoked salmon (shredded)
- 2 tspn baking powder (ensure gluten-free)
- 2 tbsn butter
- Salt and pepper to taste
- Fresh chives, snipped into 1cm lengths
- Fresh dill
- ½ lemon
Method
Whisk eggs very well in a bowl and season with salt and pepper and set aside. Melt butter in a large, nonstick pan until foamy over low-medium heat. Swirl it around to coat the pan bottom. Add the egg mix and cook gently for a minute or two, then begin to bring the edges in towards the center as they begin to set. Spread half of the smoked salmon and half of the cream cheese and continue to scramble the eggs until they are light and fluffy. Aim for the mix to be moist. Add the remaining smoked salmon and cream cheese and finally the chives and fresh dill. Squeeze over some fresh lemon juice to bring it to life and serve immediately.

TIPS
